12 Days of Baking – Day 1: Old Fashion Gingerbread Squares

Oh snap! Let the holiday baking begin. I’m kicking off my 12 days of baking with an old time classic, gingerbread. Say what?! Yep, 12 days of baking until Christmas. I hope I make it.

Alright, let’s do this! I love the rich, spicy, buttery, taste of gingerbread. It’s magic! I added 3 different glazes to my recipe to give the gingerbread some variety. Salted caramel. Lemon. Powered sugar. This recipe is Christmas to perfection. Speaking of perfection, I’m going to make a cup of tea and watch The Holiday (one of my favorite Christmas movies of all time). Jude Law is so hot in this movie! I could watch it over and over again. Confession time, I’ve seen this movie over 100 times. I watch it when I’m bored. I watch it when I’m sad. I watch it when I’m happy. Did I mention how hot Jude Law was in this movie. I love every scene he’s in. Ok. Enough about my slightly creepy infatuation with Jude Law. Let’s get in the kitchen!







Recipe adapted from


  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoons ground ginger
  • 2 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1/2 teaspoon of nutmeg
  • 1 stick of unsalted butter, cut into 1/2-inch chunks
  • 1/2 cup dark brown sugar
  • 2 tablespoons of white sugar
  • 1 cup molasses
  • 1/2 buttermilk 
  • 1 large egg
  • 1/2 cup boiling water + 2 tablespoons



  1. Preheat oven to 350 degrees. Grease a 9-inch square pan with nonstick cooking spray. Add a few tablespoons of flour to the pan; shake and turn pan until bottom and sides are evenly coated with a light dusting flour. Holding pan upside-down over sink, tap out any excess flour.
  2. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, nutmeg and ground cloves. Set aside.
  3. In a large bowl, combine, butter, egg, dark brown sugar, white sugar, and molasses. Mix together.
  4. Add dry ingredients to wet ingredients and whisk until just combined and there are no more lumps. Add in buttermilk and mix together. Add in boiling water and mix together. Pour batter into prepared pan and bake for about 35 minutes, or until the edges look dark and the middle feels firm to the touch. Set pan on a rack to cool slightly, then cut into squares and serve. This cake is best served warm out of the oven or reheated.

Lemon Glaze

  1. In a small bowl combine 1 cup of powered sugar. 1 tablespoon of lemon juice. 1 tablespoon of milk. 1 teaspoon of lemon zest. Mix together. Add more milk or lemon juice depending on consistency of your glaze. You want it to be thick enough to spread on your gingerbread.
